Taleggio is a smear-ripened Italian cheese named after the caves of Val Taleggio. It’s one of the oldest soft cheeses produced every autumn and winter. It takes approximately 6-10 weeks to mature. Washed with sea water once a week to prevent unwanted mould infestation
